I hope that everyone had a great Memorial Day Weekend. Now that it has passed, Father’s Day (June 19) will be here before we know it, and we can’t forget the special men in our lives. I am loving all of the recipes I’ve tried from Gwyneth Paltrow’s new book It’s All Easy. I highly recommend her Indian creamed spinach, her tamari noodles (I added sautéed zucchini, onion and mushrooms) and her black bean soup. Every recipe I’ve tried is seriously easy and delicious.
Her almond orange overnight oats were a big hit with me, but the rest of my family didn’t want a repeat. If you generally like the almond/orange combo, I highly suggest making it, but with a few modifications (1/4 cup milk instead of 1/3 cup makes it less soupy, and I’d back off the orange zest just a bit).
I came up with my own version that is more toddler and husband-friendly, and it will definitely be on repeat at the Wolf Den. Read on for my recipe for raspberry lemon overnight oats.
I will admit it, I’m a wannabe artist. However, in college I realized that I excelled much more in my art history classes than I did in my studio art classes. So, I’ve settled for the second best thing — being an admirer and a collector. I’ve recently become particularly enamored with all of the local art Atlanta has to offer. I love this salad. It is so easy to make on a weeknight, and it satisfies my craving for pizza — without the pizza! It is reminiscent of the salad from your favorite pizza place, and you can omit or add any ingredients you’d like. You can also substitute a simple vinaigrette if you aren’t up for making the dressing, but who doesn’t love a creamy Italian dressing?

Y’all. I’ve just broken out of my avocado toast rut with garlic naan topped with avocado! Naan is such a versatile yet often overlooked grocery store purchase. I found mine at Whole Foods near the bread and English muffins. I had some left over from when I made Gwyneth Paltrow’s Indian Creamed Spinach from her new cookbook Its All Easy (it was fabulously authentic and easy by the way). My daughter just turned two, and we had the sweetest little backyard picnic for her! I wanted to celebrate her birthday without overwhelming her — or me! I can now say that I’ve found a sweet little backyard party that I can replicate for years to come with little to no effort or much expense!

I’ve always enjoyed shopping for my daughter, but now that I am pregnant again, I really enjoy shopping for her. Y’all, Chrissy Teigen is somehow a hybrid of a supermodel, comedian, and a good cook! You must pick up a copy of her book — Cravings! Her introductions are as entertaining as her recipes are enticing. I made three of her recipes this week and can’t wait to tackle some more. Below are my thoughts on the three dishes — but no recipes. Sorry guys, the lawyer in me isn’t going near any copyright issues!
Since my Foodie Friday post tomorrow will be a review of Chrissy Teigen’s Cravings, I wanted to post this delicious trail mix. Happy snacking!
Trail mix is a great snack no matter who you are and what phase of life you are in, but I’ve found it especially great as a busy mom with a toddler and one on the way. In a pinch, it can count as breakfast or lunch, and it has been known to get me through the afternoon slump and keep me from eating my toddler’s dinner.
